Tomato Soup Saturday


I went to the farmers' market this morning and came home with twelve pounds of tomatoes. I've spent the day cooking, and I'm feeling much better about things!

Bouquets of basil were added to roasted tomatoes, loads of garlic, onions, and more.



Ina's Garten's Roasted Tomato Basil Soup recipe really is the best! I quadrupled it, and from it I froze enough soup for:

- six 6-cup meal-size portions
- seven 3-cup lunch-size portions

All is right in the world again!
